Our Story

Set Sail from
Stillhouse to Tasting Room

Sailbird Distilling began with a simple idea: create approachable, small-batch spirits that reflect the coastal character of St. Augustine. Our production distillery is where the work happens — the mashing, fermenting, distilling, blending, proofing, and bottling that turn raw ingredients into finished spirits.

Our Tasting Room at 228 W. King Street is where those spirits come to life for guests. It is the public face of Sailbird Distilling: a place to sample our lineup, enjoy a cocktail, learn about what we make, and experience the brand in the heart of St. Augustine.

From the warehouse to the glass, every bottle carries the same focus: quality, balance, and a sense of place. Whether you find us behind the scenes in production or across the bar on West King Street, Sailbird Distilling is proud to offer a true taste of St. Augustine.
